It's quite simple really.
They ask a bunch of people their opinions about who the best teams are, then they list the results of all those opinions.
I'm not sure why people are still confused about how opinion polls work.

OSU O would beat our D very easily

Chase Young is why OSU is currently ranked higher. He is the best defensive end/pass rusher I’ve ever seen. Offensively OSU isn’t as good as LSU but right now OSU is legit on defense. I think the speed of the D line is the real difference between the two teams. Maybe when LSU gets back to full health they can closes the gap.
