Any time I'm on I-20, I try to time out hitting Longview close to lunch or dinner to eat there.
I hit the one right off the hwy 42 exit just West of Longview/North of Kilgore, but the original is in Longview.
Pecan Lodge in Dallas is also good.

Cooper's in the Fort Worth Stockyards.
Get a beef rib (only need one) or the brisket. And the jalapeno mac and cheese. They have the best free beans in a giant pot and their sweet tea is off the charts good.

Bodacious is fantastic! There is a place in Grapevine called Bartley’s BBQ, it has the best brisket I’ve ever tasted and you can ask for a lean cut. Their sides are damn good as well.

Soulman's right off I-20 in Van, Tx is really good.
The original Country Tavern off Hwy 31 is good too.
I have tried Real BBQ in Shreveport and it was not good. I don't know why people say it is. But, I tried it their first week open, maybe I need to go back.
