Oh goddam. You don't put raw okra in the damn pot of gumbo. You sautee the shite down with your vegetables. The sliminess cooks out of it. If you're making slimy gumbo of ANY flavor, you are doing it wrong.

I've been making it longer than that and I don't put okra in either seafood or chicken and sausage. because I don't like it in my gumbo. ditto with file'. i'll put that vile crap on the table for others but it is just too dominating of a flavor imo.

I do add vinegar to my gumbo however.

I have eaten gumbo all over the state and I find that people like different things and dislike other things. it's gumbo.

and ONLY IN LOUISIANA will people argue about their gumbo recipes on a football message board.

How do you call yourself a Louisianan and not know that the French word for okra is GUMBO?

Gumbo is actually a Bantu word introduced to the Southeast by slaves from Central Africa. However, it does mean okra. If you make a chicken and sausage "gumbo" without okra you are technically making a chicken and sausage stew or soup. Oh, and I hope the coaches enjoyed their in-home.

Gombo is French for okra and the pronunciation is like gumbo. The French term is almost certainly derived from the Bantu term for okra since the plant originated from the region of Africa where that language is prevalent (or, at least, that's where the French came across it).

So, either way, gumbo is okra.

And the only vegetables that belong in a chicken and sausage gumbo are onions and bell peppers. That's from this old coonass from Duson who knows his sh*t. If you need slimey okra to thicken your roux then you need to learn how to make a roux because chances are you get that sh*t from a shelf in the store.

Edited to note:

There is a HUGE difference between a Cajun Gumbo and a Creole Gumbo. Probably where the indifferences come in btw.

I'm add sliced okra. Nothing over posting. And not as a thickner. I include it because it tastes good.
