Everything you said is the truth. The company I work for had 2 tables, one at $2000 and one at $1500. The food was a joke. Drumsticks, canned beans, sliders with tomatoes stabbed to the bun, and a "wedge" salad that consisted of bag lettuce and kraft blue cheese. I truly felt like we were being pranked. And the beer selection was subpar from what it has been in years past. The speakers were too loud, the MCs kept hitting people in the face with footballs thrown offstage, and the waitstaff...the waitstaff worked hard. I'll give them that, they hustled. But when you have 6 people for 60 tables, you're going to have to hustle. And they did this why? Because the casino gave them a free room in the hopes that some of the attendees will go gamble? Get real. Cater to your fans, listen to the complaints and make a change.
I'll take the college co-eds assigned to individual tables, St. Arnold's beer and Baton Rouge food booths at the River Center all day.

I went but only had time to stay for a beer and plate of jambalaya. I did see the barrage of footballs around the 12:15 range. If it's free to do there and 10K at the River Center then I totally get it. My favorite year was as a student when it was at the Atrium in the Argosy (or Sheraton? I don't know what it's called now). They signed RP's class with 13 people in it and we ate unlimited Popeye's and drank beer all day.

I have a restaurant, so generally I would buy a GA ticket for the old style event....go early...go work for lunch...then go back. I went early, about 8 am to check it out. I could see nothing at all was set up except ffor maybe the VIP area and not sure about it cause I couldn't go in. There were a few paintings upstairs and that's it. Heard on the radio they were live from the stadium bar....but you couldn't go in...it wasn't open yet.
So I went to eat breakfast at the buffet. On my way out...9:15 they had just started letting ppl into the Stadium. I went home to watch the JC 4 announce then back to work. They were also just then trying to set up.
I really don't feel, for the avg person its going to be worth going anymore.
Based upon my morning experience...I did not go back in the afternoon.

They did listen to the fans the year with the terribly long beer and food lines at the river center, they did make some changes the following year but still a lot to be desired.
It could truly be a large money maker and very well attended if they just listened to fan input.

My facility can hold 800 people (I've fit 1,000) I don't know the exact numbers of the event, but that should be in specs. Fire department sets the limits.
I would simply charge a door fee of $30/$35 and everyone guaranteed not to run out of food/liquor/beer. I would have several tables of great hot/cold food choices and a charcuterie table (snacking stuff, cheeses, vegetables, stuffed artichokes, marinated veg, spinach Madeline, fruit&fondue etc)
In this business, food cost stay at or below the 23% mark. Any less and the food quality suffers, any more and you're doing something wrong or you're wasting. Sounds like their food cost was about 2% haha. Labor is a bigger chunk. Usually try to keep it at or below 33%. The gridiron club, TAF is a little tough to crack...LSU in general is. I do a lot of stuff for sororities and fraternity's, LSU law school and school of music etc.
I would definitely like to meet with some directors of TAF and the gridiron club (pretty sure we've done stuff for gridiron, would have to check the database)
Anyway, I am tireless and demand the best from people who work for me. Even after 30 years, I have taken the company in a new direction and diversifying in different areas. I would love to get a foot in the door with LSU athletics.

Kody's which is more of a family place. Giggitys which is 21 and up and soon to have a under 21 restaurant section. Shortys is the oldest bar in Port Aransas and has no food.
