what I’d like is a two basket propane fryer that sits on feet on a counter, with drain valves to empty the oil reservoir. The fryer would stay put (ie doesn’t need to be portable). I’m seeing those nice Cajun Fryers but it looks like those are made to sit in a stand

any ideas?

R&V Works cajun fryers can be had with no stand. Much better quality than the thin bayou classics.

Looks like you need a 4 gallon to get the two baskets. I would opt for the single basket...you can fry a lot of food in a single basket.

I have the 6 gallon and it's way more than you would need unless cooking for a party.

Is there going to be a wall/back splash behind it? Because the Cajun fryer has a vent stack that comes out the back. If I remember correctly it gets pretty hot.
