I lost a few of those screws between the time I took down my son's crib and the time I had to put it together again for my daughter. I just used regular 3" star drive screws and filled the holes with putty then dabbed a touch of paint on it to hide it. When I took it down for the final time, I just dug out the putty then unscrewed the screw. Sometimes that's easier and you just gotta improvise.

Don't know what they're called, but Home Depot and most hardware stores have them. They'll be in the plastic "SPECIALTY FASTENERS" bins.

This is a furniture connector bolt and barrel nut.
You should be able to find these at any hardware store.
