What y'all eating for lunch?

Trying to get some lunch inspiration from the Health board. I've been doing meal prepping for about a year for lunches (kinda tapered off last few weeks).

Just looking for some of y'all top 1-3 go to meals. I'm aiming for low(er) carb, not necessarily full keto, but being mindful of eliminating most simple carbs.

I keep it simple. I’ll do chicken thighs, ground turkey or beef, or fish as my protein. Usually 200-250g of each.

My carb is jasmine rice, sweet tator, or roasted brown potatoes. 100-150g of each.

If I have time I’ll toss in some broccoli, Brussels, or another green.

I Mix and match all those and repeat.

Snacks are Greek yogurt, boiled eggs, or cheese.

800 calories 121g protein

Lunch is usually 12 to 16 oz of ribeye and a 40 gram whey isolate protein shake.

I ate

7 large grilled shrimp
3/4 cup of smothered string beans
A few blueberries.

I do alot of

Boneless/skinless grilled chicken thighs/or turkey
Any green vege
Fruit

Love a good steak here and there with cheesy steamed broccoli

2oz cottage cheese
However much spinach
1 Xtreme wellness keto tortilla
Taco seasoning

Im not keto, but shoot for 80g fiber and day and those tortillas have 12 each i think. Eat this for meals 2 and 4 everyday for the last 2 years now, sometimes using Buffalo sauce instead of taco seasoning.
19 g carb (12g fiber)
5g fat
33.5 protein
