Need some dinner ideas. Looking to hit around 1000 calories for our Sunday dinner. I feel like we’ve eaten everything on Pinterest and have ran out of ideas.

I am a big fan of shredded pork tenderloin burrito bowls

Shredded pork tenderloin, seasoned with taco seasoning(my taco seasoning is cumin, salt, pepper, cayenne, chili powder, paparika, onion powder and garlic powder) and mixed with pinto beans, fat free cheddar, low fat sour cream, peppers, onions, lime juice, chipotle peppers + abodo sauce and cilantro.

NY Strip will do. I'm doing Keto right now so Ribeye works for me.

Pork Tenderloin would probably be the best value for "Large, tasty, healthy". Or Tuna steaks, depending on how skilled OP is in the kitchen.

High protein, good fats, low carbs. What’s unhealthy about that?

The fact that 40-50% of all that fat is saturated. That is bad fat. And there's tons of it.

There is nothing wrong with a good ribeye. Eat if with some leafy greens and it’s the meal of fricking champions.

I'm not saying one study is better than another, but there is a lot of evidence coming out that fats were never the enemy, including saturated fats.

This is just one quick one

The newer information coming out is fats are good (as long as they aren't from processed crap) and added sugar is the main issue.

Oh I love ribeyes....just saying I didn't think they were exactly "healthy". But hey if all that fat isn't so bad, then that's good for all of us

There's plenty of evidence to suggest that saturated fat was disproportionately demonized, but the jury is still out on whether it's "healthy". There's evidence that monounsaturated and polyunsaturated fats have heart-healthy properties, but little to suggest that saturated fats have the same heart-protective benefits. At best, evidence suggests they're mostly neutral...which is not really a bad thing, but they also don't seem to be the savior of humanity.

That said, I am currently eating keto.. Most of my fat intake is indeed saturated because I love fatty meats, but I use avocado oil and olive oil in place of other saturated fat sources like butter and coconut oil. It's also very important to get a lot of omega 3s to balance out the omega 6s you'll be taking in. Some recommend taking a lot of fish oil. This is something I need to do a better job of incorporating.

As to the OP:

Burrito bowls are pretty easy to do in bulk. Cilantro lime rice, cook up a bunch of boneless skinless chicken thighs in lime juice and chili powders, etc.
