Ideas for some healthy one pot dishes

General dietary goals:
High protein, relatively low net carb, not particularly scared of fat so long as it's not in abundance and is healthy fat - definitely not going for ketosis
I've tried to construct some tasty one pot dishes that meat this criteria and my main go to now is some slop of ground beef and cabbage with some alliums and spices for flavor
I can't tell you why but I just like one pot dishes. I don't want to cook a pork chop or a chicken breast with a side of veggies. I want it all in one big mess.
Any ideas that are along these lines would be appreciated

Hard to beat a good chili. Add some chunks of sirloin with the ground beef.

A steamer/rice cooker, a pressure cooker and a sous vide are going to be your best friend. That opens hundreds of recipes that otherwise would be hard to do.
Easy clean up, easy to do.
But to answer your question
Sheet pan meals are going to be a great asset for you
Getting a veggie pan for the grill helps a ton
Premade kabobs
Steam in bag veggies are also great.

One box velveeta shells and cheese
Two packages remain noodles, any flavor
One package hott dog, sliced into half inch slices.
1.)Boil shells and raman noodles until al dente
2.)Drain
3.) Add noodles, cheese sauce, raman spice pack, and sliced hot dogs to a crock pot and turn on high until hot. Stir occassionally.
4.) Enjoy!

I have a sous vide that I use often
I let my folks borrow my instant pot and I don't anticipate getting it back. I'll have to buy another one.

Veggie stew
- brown cubed beef chuck/roast
- deglaze
- add whatever veggies you like, I normally use peas, carrots, kale, corn, sweet potatoes and maybe mushrooms
- add a can of tomato sauce and water to cover
-season to taste
-simmer for till veggies are tender

Slow cook chicken breast and a can of sauerkraut in the crock pot. It'll stink up the house, but its pretty damn tasty.
Others mentioned pot roast and veggies. Get some sausage and slow cook it with the roast. Makes for a good meal. Plus sausage is awesome.
McCormick makes chili packets. 1lb of ground beef, 1 can of tomatoes, 1 can of kidney beans, and the packet. Quick, easy, delicious.
Take a 1lb of ground meat and add a packet of Old El Paso taco mix to it. Some cheese and sour cream. Make lettuce wraps out of it if you're going low carb.
Make meat sauce with your preferred red gravy. Instead of pasta (if you're going low carb) use green beans instead.
Also, add fresh spinach to as many meals as possible. It works as a salad, but spinach is virtually tasteless so it cooks down well in most dishes.
