1) what is your go-to after work, throw together quick meal?

2) what are some of your go-to snacks to hold you over between meals?

I don’t follow strict Paleo, I am more a Tom Brady alkaline based diet guy, but that makes me like 90% paleo!lol
I get the nuts/raisin bag of packets from Trader Joe’s. I love a honey crisp apple. A bottle of water, a honey crisp apple, then another bottle of water and you never felt so full! Think clean fiber for fullness. All the berries(polyphenols) are great.
My dessert is a smoothie bowl: frozen banana, frozen blueberries, a little almond butter, 2 egg whites, and a few ounces of almond milk. Make it thick, freeze it for about 20-30 minutes, then top it with a small bit of paleo granola. If you’ve got a real sweet tooth you can even put a little honey on top of it.
Cabbage rolls are great. I make a 96/4 burger with vegan cheese(almond base) and an avocado on top, no bread. If you’re greedy put some bacon on top.
Rotisserie chickens are great. Eat the leg quarters by themselves then chop up all the white meat to pu on your salads. Or use the white meat to make some chicken salad with some Veganese, chopped up apples, pecans or walnuts, and cran raisins.

I burn through honeycrisp apples, but I should start buying more berries. Smoothie bowl sounds awesome, thanks!

You have a specific recipe you follow for cabbage rolls?

I wish, my mom makes them and get them at her mercy. The hardest part though is just steaming that cabbage to the point that you can roll the leaves easily. The insides are just ground meat or ground turkey and some tomato’s.

I've eaten Paleo plenty in the past. The key is meal prepping or at least cooking enough for plenty of leftovers.

Go-to meals for me usually included 90/10 ground beef or bison, sirloin or flank steak. Some kind of roasted veggies.. brussel sprouts, cauliflower, cabbage, broccoli, asparagus, etc., And sweet potato or a starchy root veggie, squash, or gourd. Worrying about recipes has never been my forte.. I just throw stuff together and season it. Another go-to is a goulash.. 2 cans diced tomatoes, 1 can tomato sauce, 1 yellow onion, garlic, seasonings, large head of lettuce, 2 pounds ground beef, bison, or fattier turkey. Sautee onions and garlic, cooked meat, dump in chopped cabbage and let it cook down some, dump in tomatoes and simmer for 30-45min, stirring occasionally. Easy, delicious, makes a ton of leftovers.

Hell most of my diet is still incredibly similar, I just eat rice and allow flexibility to eat non-paleo things.

Yeah, we’ve done paleo for extended periods, but over the holidays we kind of let loose. For the most part, we start very strict for a month or so, then are more lenient with things like rice or dishes we may order at restaurants. Anyway, just decided we needed a restart and always looking for new ideas. The goulash sounds perfect, thanks!

Eggs & some kind of meat(bacon/sausage/meatballs/hogsheads etc) with vegetables (spinach/peppers/onions/whatever )

I posted this earlier this week:
1. Spaghetti Squash: Cut in half, scoop out seeds, coat with avocado oil and place face down on pan. Bake on 425 for 45 minutes. While this is happening, fry up some ground beef on a skillet. Mix the beef with pasta sauce and top over the spaghetti squash.
2. Lettuce wraps: Grab a head of iceberg lettuce, peel off large enough leaves to make “tacos”. Fry up some ground beef or chicken. Mix coco aminos with almond butter until the mixture reaches a runny liquid consistency. Top the meat with the mixture for an amazing Asian wrap meal.

Great call for the Asian wraps. I’ve done something similar before but it was following a more complicated recipe, not that it was difficult, but if there’s a way to do it with fewer steps, that’s always a win. Thank you!

Yup, it’s easy and good. Also, pintrist has a ton of great recipes if you want more ideas.

3. Sweet potatoes (good side): Dice sweet potatoes into cubes. Season with olive/avocado oil, cinnamon, cayenne pepper, and sea salt. Bake for 45 mins at 425. Serve on the side of lettuce burgers or just about any other meal.
4. Spaghetti squash and bacon casserole: Cook spaghetti squash like mentioned above (or boil) then scoop into a raised baking tray. Fry bacon, take out and put in a separate dish on the side. Cook broccoli in the bacon grease. Put the broccoli and bacon in the raised baking dish with the spaghetti squash and mix around until even throughout. Top with full fat coconut milk. Bake for 20 minutes at 425. Can also add cooked chicken to this dish for more of a protein boost. The only draw back to this is the amount of prep time, so this might be a good weekend option (unless the spaghetti squash is cooked already).
5. Stir fry: Gather frozen cauliflower rice from Costco, broccoli, green beans a red bell pepper, green bell pepper, and minced garlic. Add to a large raised pan and cook with avocado oil, sea salt, ginger, a bit of cayanne, and coco aminos. Add whatever protein floats your boat.
6. Quick Chili: Boil 2-3 sweet potatoes. In a separate pot fry 2 lbs of ground beef. Drain the water and peel the potatoes. Mix the potatoes and beef in the pot with cumin, cayanne pepper, chili powder, paprika, and sea salt. Continue to cook/mix with a bit of water to make a chili consistency.
