My wife will be sitting for the exam in a couple of weeks and was curious as to settings where they practice their craft, not all people are comfortable in workout settings so how open are people to being worked with in their homes, what hours, including weekends, are people in need of for training, and just basic, everyday customer expectations...meat and potato sort of things...nothing fancy.

That depends on your population
And if you are looking to train people in their home then you may be catering to the stay at home mom or dad or the elderly that may or may not have chronic med conditions.
First do a quick home eval to see if it's even feasible to train them in their own homes to begin with. Also check for their well being with the elderly. If the environment can increase their fall risk, talk to them and hopefully you can give them ideas. If not maybe their health care practitioner can recommend a home health pt or ot for a home midification
