Looking to play golf for my first time in BR this weekend, from what Ive read these seem to be the top two public courses in BR, which would you recommend? Also open to any other suggestions you may have.

Both courses are in good shape, both greens are rolling good. Santa Maria will be crowded after 12 and Beaver will be wide open. Beaver is a links style course and Santa Maria is a RTJ design

Greystone is in Denham Springs and just as close as Beaver. Their club championship is this weekend so it's currently in top shape.

I played Beaver Creek. It's one of my favorite layouts in the area. I think it's slightly more entertaining that Santa Maria.
Greystone is also good, but tighter so depends on your skill level to desired enjoyment ration.

Nope. Greystone is much tighter and has some unorthodox holes.

Will I be able to walk on with the club championship this weekend, or will it be all booked up?

They are going off on the front and back between 8 and 9:40. It should be open around 1, maybe earlier.

You got that right, something Greystone can’t seem to achieve, even for big 4 balls I’m told.

Greystone is always pretty much a ghost town during LSU games.
