There's an option to change the sticks and another option to change the button layout.
I was able to swap my stick layout opposite of the default. You should be able to do it too.

Try reverse southpaw, Broke. I think that sounds close to what I use

I had to think of it like this: left stick makes it go in a flat circle and right stick makes it tilt in all directions. Nose down makes you speed up and nose up makes you flare and sort of brake.

You have to stick to one flight choice. I learned on default and am damn good with it, as you could be by sticking with one layout you like.

considering how friendly you are with the neighborhood light poles, im not sure you should be giving advice on flying
