I see it's very highly regarded. Nothing is sticking lately, so I'm looking for something new to play.

There was so much shite to do that I got overwhelmed and never picked it back up. P5 and BOTW are the 2 most high acclaimed games that I own that I just barely touched. Need to play them

It was fantastic, but very Japanese in regards to tropes and what not. If you aren’t into the culture it may not hit home. I’ve had friends both love it and then others that have stopped playing hours in.

It's a turn based RPG where you play through an entire year (and some) of life. The combat does have some flair where you get extra moves by exploiting enemy weaknesses. Every character has a "Persona" which they use to in combat, so physical attacks are their weapon of choice, but any special ability or magic comes from the persona.
You play through almost every single day advancing the plot and doing whatever you feel like on your off days. The gameplay loop ties into that free time, as you spend time with your friends, you unlock improvements for personas of that type (Based on tarot cards). There's a lot more depth to it, but I'm just trying to give a brief summary.
Lastly, the graphical style and music is truly great. There's not another game out there that has as much work put into small things like menus, victory screen, etc. It's very polished and is quite engaging.
TL;DR: It's an amazing game. Very long. If you can handle the cast and setting being high school students in modern day Japan, then you'll love it.

I like some anime and anime games. DBZ, Fist of the North Star, Demon Slayer, Code Vein... but this is just too much. The life/dating sim stuff just weirds me out.

The life/dating sim aspect isn't really the main point of it. You do them in order to gain new abilities in battle and whatnot. It is what makes the game 100+ hours long, but there is a purpose to it other than just being a life/dating sim.
If you wanted to play Persona-like games without the life/dating sim aspect, just play the Shin Megami Tensei games and their various spinoffs instead. Nearly same battle system minus the sims.

Well, the game doesn't force you to date anyone. You can just be friends with everyone (or try to date them all if you want), I don't think it's too overt as it doesn't really impact the plot of the game.

Pretty much what everyone else said. Very stylish, incredible music, engaging combat.
If you like RPG's and anime it will probably be up your alley. I loved it. It's long as hell though.
