Some of the AX series are manufactured by flextronics, but I forget which ones. Doesn't matter though.
All of XFX's are seasonics as well.
Anytime you see a recommended brand, odds are its because most or all of their PSUs are manufactured by a combination of good companies like seasonic, superflower, delta, enermax, sirtec, etc.
Many of corsair PSUs are made by channel well, a huge manufacturer known to make units for just about every PSU brand ranging from shitty to "just fine," which is why uneducated brand loyalty is a foolish and toxic thing.
You ought to at least read the cliffs notes to my guide before finalizing your parts list.

So I got the new video card in. It says to uninstall the old drivers before installing the new card. How does one go about uninstalling the old drivers?

Keep in mind that's not an official AMD tool. I still use it for trouble shooting and testing beta drivers, but going to your control panel and using catalyst uninstall tool or whatever it's called might be all that's necessary since it's just an AMD -> AMD upgrade.

Build I went with
I know people will probably not agree with some of this or think I made some bad decisions but it's what I wanted to build. I'll also have my old 500gb and 3TB HDs for backup and storage.
I might make a few changes once I get everything in mainly regarding fans and lighting. I ordered custom blue cable sleeves from Corsair and also blue LEDs for the Dominator RAM. If the H100i SP120 fans don't include the colored rings I'll probably pick up a pair so that I can add the blue rings to them. Might do the same for the 140mm rear exhaust fan, or I'm thinking of putting an AF140 blue led fan there. And then perhaps swapping the white AF140 led fans in the front of the case for blue ones. It depends on how I like it because I'm also going to add an led strip, either blue or white. I'm thinking of probably swapping the front fans for blue led fans, then having blue-ringed SP120/140 fans for the H100i and rear exhaust. I think adding a blue led strip may be a bit too much, while a white one would accentuate the cabling, fan rings, corsair logo and RAM LED lights creating a clean, classy look. Might even just keep the front arctic white fans if I do that. Any opinions?

I can use the Corsair Link program to control the cooler fans, but do you guys have any thoughts on a good fan controller that I could pop into one of the 5.25 bays to control the other 3 fans, and maybe a 4th if I ever add a fan to the bottom? Also, I'm debating between Windows 7 Pro, since Home has a 16gb max I believe, and Windows 8.1 64 bit. It seems like 8.1 has a faster boot time, uses less resources, and may be better moving forward. And I realize there are ways to incorporate a classic start button and even make it look more like Windows 7, I just really don't like the stupid App screen and the random pop ups from Metro. Is there a way to remove that at all? I won't my computer to feel like I'm running Windows, not like I'm using some tablet.

They're the same fans, just the dumbed down cheaper version. I broke mine down and painted them.

If you were to replace them, for the cooler fans would you go with the high performance or quiet edition? For a rear exhaust, would it be better to use an SP fan or is the high airflow AF fans fine to use?
Also, on each pair of Sp 120 fans I look up it says it includes 3 colored rings in red white and blue, is that literally 1 red, 1 white, 1 blue, or do they mean pairs so you get 2 reds, 2 whites, 2 blues? I'm assuming it just means literally 3 rings, 1 of each color, but that seems kind of stupid since you're buying a pair of fans.
