overclocking, more pci-e slots, better power phase, better capacitors and hardware on the board. Generally enthusiast level shite when you start getting into the $200+ price range.

Truthfully the features are mostly geared at multi GPU set ups and overclocking.
No big deal if you don't need either one of them because you aren't into that. I just figured I would offer.

I imagined spending 2k on the tower and it's main components. This is what I have so far. Where should I cut back first to get under 2k but still allow for future expansion.

Fantastic setup there. I might go with a larger HDD but I dont know your storage needs so 1 TB might be plenty for you with the 256 SSD. I just like to know I have the extra space and a 2 TB drive is barely anything more.
I still dont quite see the need for a 780 at that price. Honestly, I'd save some money and go with SLI 660TI's or crossfire 7870LE's.

got a point there. $250 on outdated equipment is a lot. id go with a $100 asrock z77 board or splurge and do 2011

I think you may be right about the 780's. I'm kinda jumping right into the cycles, being out of the game for a few years, and didn't realize how new the 780 was. Same thing with the motherboard; this is exactly the kinda help I needed, and appreciate.
I have multiple external hard drives with all my stuff on it, so I kinda just use my big HD as a purgatory before final resting places.

I kind of derp'd on the 660Ti's, you can get 2 670's for about the same as a 780 and eat it's lunch with that setup. SLI 670's would be BEAST.

670s are the worst card to buy right now... you can get equal performance for less or much better performance for the same price or a little more.
