I started Eve Online last night.

Looking for something new to dabble with. I'm still doing the tutorial parts.

How big of a mistake am I making?

I think there is a not so dense version of Eve for people who don't want to get in the weeds, but from everything I've ever seen of it, it's like going into space and getting a desk job. Looks like you're managing spreadsheets all the time.

I think the first portion of the tutorial - which was character creation, ship movement, some windows, basic attacking, then docking at a station - took about an hour or more

the next phase was "industry" and I called it a night before embarking on that

Didn't the devs state once that the majority of EVE players stayed in high sec which is the complete opposite of what you would expect given the stories that come out of the communiity.

I imagine that the people that are already entrenched are there because they like that type of game. They're not going to go easy mode all of the sudden. It's for the people who want to get into Eve but are intimidated by the uber steep learning curve. But it's such an old game, how many people are really looking to get into it now?

One server makes a huge difference in games like this. There's also nothing else on the market quite like it, so I think you're safe starting out now. You will probably never catch up to the vets though.
