Primarily gaming and media playback. This is for my home PC, so lots of CPU intensive games like Total War and Civ. I'm open to AMD or Intel. I've had Intel CPUs forever, but I also have a non-Intel GPU (RX580) so it doesn't really matter to me.

Both the 5600x and 5800x have been in stock more often than not. In fact, both are in stock on BestBuy.com right now. If you're in the market for a 5900x, that's going to be more hit and miss.

And I'll defer to someone else re: Intel

Can't go wrong with any 6 core/12 thread i5 or the 5600x.

The 5600x is $299 and something like the 10600k is $175. Both will perform very similarly at 1080p

Price drop is real. Things are coming down steadily. I'm not desperate but I think once I see a 3080 for 1000 or less I will bite.

Yes. Because of market pressure, prices on third gen haven’t come down at all. You’re better off just jumping to Zen 3. 5800x if you need the cores, 5600x if you don’t.
