Just get 2 really strong fire weapons, 2 really strong lightning weapons, and 2 really strong physical weapons, with one of the 2 being strong and heavy, the other being weaker, but fast.
I'm rolling with Lightning Spear +5, Lightning Zweihander +10, Fire Uchigatana +10, Quelaag's Furysword +5, and Great Lord Greatsword +5.
I have rolled with these for 2 playthroughs and haven't faced anything i cant handle. Zweihander is the best. I one shotted Taurus Demon on NG++ with it. I'm on NG+++ in the DLC right now and getting through fine.

BPG, also there are a couple really good DS wikis out there. They really helped me out early on. Also the YouTube user EpicNameBro has some fantastic videos that give hints to beginners. I recommend at least watching his first two from his 'Dark Days' series. He does a good job explaining weapon scaling, uprading, damage, blocking properly (lower your shield after you block for quicker stamina regen), and just a lot of other hidden things that beginners won't know about at first. I found his YouTube videos very helpful.

ETA: of course, though, nothing satisfies more than exploring on your own and discovering new things. The trial and error method, I found, is probably the most rewarding aspect of this game.

Yeah there's just so many areas I had no idea what to do when. I guess its on to the parish and fighting whatever that huge dog looking thing is past the dragon.

For the hog, just make him chase you to the bottom of the stairs where his fat arse can't fit. Then when he turns around, hit him.
