Betrayal At the House On the Hill, Dead of Winter, or sheriff of Nottingham

Which would you recommend? I've watched the tabletop for all 3. Sheriff seems the most easy but I feel like I could recreate the game myself.

Depends on the group.

Once you're familiar with the rooms and haunts you'll realize that the game takes too long and isn't actually all that fun. The best part of the game is the gimmick (the haunt) and they all start to feel the same after you've done three of them.

I have played all three. Sheriff is fun, but I wouldn't recommend it if your group can't kid around and make the theme real. It's not fun to play with three people who are trying really hard to win.
DOW is by far the deepest game with more complicated mechanics. It does a great job of conveying the theme and you learn quickly that it is really easy for characters to die. The characters are interesting in fun. It's pretty brutal when your best fighter dies from a bite. Does your group have the time and patience to learn and play a 3 hour medium weight game?
Betrayal is heavy on theme and pretty fun once in a while. There's not a lot of player interaction as most people are trying to buff their stats and collect items before the haunt starts. Some of the haunts are duds so it does suck when you invest time to play the first half and then the haunt is unfairly difficult or overly easy to the non haunt player
