This is a nice 4k gaming build, which is also capable of some video editing... if you can get your hands on the 5600X and the RTX 3080.
For a strictly gaming-only PC, a 5600x can match the performance of a 5900x and a 5950x at 4k (where there is no longer a CPU bottleneck). Keep in mind this includes a retail copy of Windows 10, which you can spend a lot less on elsewhere.
I threw in a Razor gaming keyboard for him, I'm not gonna claim I'm an expert in gaming keyboard, so someone else can feel free to throw one out here.

So, depending on your platform, that will drag all three sticks down into single channel. Unless you are flat out running out of ram with what you’re doing, you’re generally better with two sticks in dual channel than three sticks in single channel.

Certainly not terrible, and will likely do anything he asks it to do with his current type of gaming.
That's a ton of motherboard for the components you have in there, but it means you can do some upgrades in the future as new games come out/his gaming tastes progress.
8gb of ram is cutting it close, so a decent 3200/16 2x8 16gb kit would be a good, cheap, easy upgrade in the future. In the mean time, make sure to go in your bios and turn on the xmp profile. Contrary to popular belief, you aren't going to get your rated ram speed out of the box, as it will likely start at jedec 2600mhz.
Second incremental upgrade I would likely do is to add 1TB of nvme memory. He's going to fill up that 500gb ssd pretty quickly, and then he's going to be playing off of spinning rust, which is no fun.
After that, I would be looking to see if his framerate is bottlenecking on the gpu or cpu and then upgrade accordingly. And that will be predicated more on the types of games he's playing at that point. If he sticks with competitive shooters, it will probably be a cpu bottleneck first, but no reason to worry about that now.
ETA: How many case fans do you have, and where are they located in the case?

The case itself I will probably change out in the next few months. Wasn't sure exactly what color/glass, etc he would like and since it's a gift I just got a basic one knowing I would change it out

Ok, I was still confused until I realized that you edited your post to say that the two rear fans are actually on the top. That makes more sense
Depending on what his temps look like, there might be merit to moving the exhaust fans from both top to one top one back. Airflow might be fine, though. I'd have to get in the case.
