You've got 2lbs of pork belly...

Whole foods has had pork belly in sale and I bought a few pounds. The 1st pound I salt and peppered then just cooked like bacon on the Blackstone. Fantastic.

What should I do with the other 2 Pounds? Y'alls call, I'll cook it.

Yeah I second that recipe as well. Then serve with cubes of watermelon the same size on a skewer. With a soy caramel and kewpie.

These things are like meat candy. And its hard to mess them up.

Cut into 1 inch x 1 inch cubes. Put BBQ seasoning on them like you would a butt. Smoke 2 hours @ 225. Take out, toss with butter and brown sugar. Place in a foil pan, cover and smoke for another hour @ 225. Take a sauce pan - cook down bbq sauce, grape (or any fruit) jelly, little bit of house sauce down to a smooth sauce. Take foil pan containing pork belly out and toss with the sauce you just made. Turn temp up to 400 and set back in uncovered for 15 minutes.
