I love a good burger but I'm pretty simple in my approach; 80:20, salt and pepper, and grilled.
I usually grill 2 minutes, rotate 90 deg, grill 2 minutes, flip, grill 2 minutes, rotate 90 deg and finish after 2 minutes. Confirm by feel.
Obviously times may vary depending on thickness but you get the idea.
I also like to grill over some wood. Mesquite goes great with beef.
Would love to cook in a cast iron skillet but I don't have one - yet.

hot griddle, the sear is the key, crusty outside, juicy slightly pink interior
toasted sesame seed bun
mayo
fresh grated sharp cheddar
raw white onion
that is all

Add a little ground pork if you want extra fat.

Blend your bison with some fattier meat. The lean properties of bison are what’s causing the crumbling.
I like to blend bison with veal (for texture) and with some higher fat beef, like an 85/15 or something. It can also help to fry your bacon as a condiment and then form your meat patties with some of the grease from the bacon.
But the crumbles is the direct result of bison being very lean.
