Not only do they want the option of drinking something besides BMC, they want the option of drinking many different craft beers

I get what you're saying there; just doesn't apply to me and thus doesn't shape my outlook because I don't really enjoy drinking beer with a meal outside of tailgating or a boil. I will always choose better food over better beer selection if I'm going somewhere based on hunger instead of thirst.

Correct, you're either a bar with food, or a restaurant that serves beer.
If you are bar with food, then cater to them. Especially if it is "simple" bar food, then you would stick with BMC. They will appreciate their own element and the services they are used to. If you have a more sophisticated menu, then you could focus more on crafts. This is a different clientele, wanting a "calmer" atmosphere.
You can't be all things to all people. You need to consider, what is your best chance for success in your particular location.

I'm not familiar with BR, but location may have something to do with it...outside of that I can only tell you how a lot of great places differentiate themselves in the Houston and outlying suburbs---they have good craft beers on tap, they do tap takeover nights with local texas brewereis coming in and having several of their offerings on tap including specialty ones...places like guru burger in sugar land come to mind. their food is pretty good but I go there because they have a great selection on tap and it is constantly rotating so they will have stuff nobody else has

The hook is we are bringing an old known name and food back to BR. My dad had 4 sandwich shops in town for 16 years. I stated who I was earlier in the thread. You, I guess aren't from Baton Rouge. Our food is better than good. Our reputation is top notch and there is 13 years of nostalgia for just about anyone over 30 that grew up around baton rouge. I have a location in prairieville off the beaten path that's doing quite well.
Having one smack in the middle of baton rouge should keep us above water for a little while.

nice...that isa great flying saucer. they have knowlegable servers as well...I have had the thunder stout on tap but not the IPA yet from Fort Bend. I'll have to find it somewhere...they are just getting started.

You can't be all things to all people, but the idea in business is to attract as wide a variety as you can.
Old people eating early bird meals, then middle aged crowd, then younger professionals for a late dinner drinking waiting for a band to hit the stage.
We can be those things with a few craft beers thrown in to get a few more butts in the seats

They had the IPA on cask when I was there... it was solid, nothing amazing but it didn't turn me off at all. Closer to Hopitoulas or Hopadillo than Jockamo in that regard.
