Would you cook/eat it?

I had a brisket I froze because I did not cook it after a couple days of it sitting in the fridge. Decided during the quarantine it may be time to cook it. Open up that package today after thawing and I thought I got a hint of slight smell. I keep smelling it and I think I can smell it at times but then I can't at others. Not sure if I am getting in my own head and it's fine or if I should toss it.

I honestly always smell something odd whenever I open a brisket or pork butt that has been vacuum sealed from the store.

hell yeah i'd smoke it and i'd eat it.

it's rare that i don't cut open and vacuum packed brisket or Boston that i don't get a waft of funk. to me, that means the good shite's on the way.

Like others have said, it's still good. I've cut open those cryovac packages and have gotten a bit of funk off the meat from time to time. Between the blood and other juices in there, it can happen.

rinse the cryo funk off that thing and smoke it. If it still stinks toss it.


Drink a lot of beer when smoking so you wont think of the stink

Like others have said, wash it off and then let your nose make the decision for you.

When you smell a bad piece of meat, you'll find out real quick how fast the human brain translates that smell into a big "nope" to all portions of the body.

I noticed it too with pork loin and pork tenderloin.
I rinse with cold water, dry with paper towels and continue on.
