Most recently, Ruffinos in Lafayette and GW Fins in New Orleans. But there have been many over the past few years.

I'm with you, hoss. I like a baked potato. Simple, filling, tasty.

I'd say more but I'm hammered as usual. I need a nap. This is a long stoplight.

In Southern California there's a small chain of restaurants owned by Clearmans. Excellent steak houses and they guarantee the potato to be at least 1 pound.

I think the issue with baked potatoes is the cooking time.

Which means they have to pre-cook the baked potatoes and estimate how many they need.

With margins so small in restaurants these days, it probably just isn't profitable.

I don't eat baked potatoes that often, but I'm lucky in that I am fine with just salt and avocado oil on the skin to crisp it up.

This makes me think I need to eat more potatoes. If you let them get cold and become a resistant starch, the carb profile changes, too.

This is a good point, but I'm sure places can figure out how to make it work.

This may sound like blasphemy to some, but at home to save time I cook them in the microwave for a few minutes to get them close to done, then olive oil, salt, little pepper, wrap in foil and but on top grill rack for 15 minutes while heading up to sear steaks. Works fine for us.

Food Network recipe

Don’t seek a full potato when we hit a steak place but if I have the itch I prefer potato skins
