Pretty sure I have a couple of recipes in the cookbook.

I rarely give out full recipes though but rather guide people to what they are looking for yesterday someone was asking about pork "spine" stew.

From what I hear, you make a mean gumbo but I don't know how that compares to the Gumbo Queen herself, Gris Gris. I think we need a gumbo-off.

I used to be a sous chef at the 755 Club but they had to let me go due to lack of volume.

The only things I'm really good at are knife work and speed...anytime I cook something that tastes good it's usually on accident.

When I was in Wyoming I attempted to make jambalaya similar to the poche picture thread

There were a few Mexican guys there that were eating it and really liked it. I still LOL to this day because one of the guys was like "Phil, we always thought Jambalaya was just a song, didn't know you could eat it!"

Well speaking for myself cajun is pretty much all I cook cause its all I know. I do the jambs and pastalayas, etoufee`, stews, gumbo's, and boiled seafoods. Learned from my father mostly and trial and error.

kajungee and tree are some damn fine cooks I would think by reading their recipe's. So they get my vote.
