What a horrible selection of wine for the French president. The caviar and lobster dish sounds incredible.

Thoughts?

Isn't the trinity of French cooking butter, butter, & butter? Since butter is well represented on the menu that's good.

I probably would have gone with a Schramsburg Brut Rose instead of the Roederer.

The butter poaching intrigues me. Has anyone on FDB tried this?

Would that be a slap in the face to the French?

I know they take their French things seriously, but I don't know if a State Dinner is a place to show off your own or accommodate your guest.

My thought exactly. Perfectly fine to serve American wines, but don't serve the juice the country club moms drink by the pool. The occasion calls for a showing of our best.

Yes, I can see the quandary. My thinking would be, because its the French, create a menu that showcases the best of both countries acknowledging our long relationship. A mix of French and American wines...I mentioned Schramsburg because I find it better than Roederer and a good example of the quality wines America has to offer.

I've done it with shrimp before. It's a lot more delicate method than we are typically used to seeing for a shrimp preparation in this area, but I thought they came out rather nice for a change of pace type deal.

I guess you have to walk the line of really good wine vs making a splash for how much a bottle the wine was.

Can only imagine $500/bottle being a news story for the next 3 days.

I’ve butter poached lobster quite a few times. It’s incredible. Not sure if he invented it but Thomas Keller certainly popularized it. You quickly pour boiling water over a live lobster, then peel it, and cook it in a buerre fondue.

Save the butter for the next day to cook eggs in.

Re wine selection I think it was Reagan who stopped serving Foreign wine at state dinners and served American wines instead. But yes those wines are maybe a bit pedestrian.

I get that, but the Roederer is like $30 and meh. Newton is solid for $50ish, but it's owned by LV-MH so there's a french connection for both of these.

Free food and booze in a famous dining room after a long plane flight? I bet he wasn't as upset as anyone here might think.

As far as the wine goes. He may have not known whether it whether it was French or American without reading the menu. At least he wasn't served "Dog Bone Chardonnay".
