I'm happy to help. Go read John Palmers How to Brew, you can find it for free in the webs. Well, don't read the whole thing, just the introductory basic stuff. It gets pretty technical in later chapters and you really don't need the technical stuff.

It's a bit of work too, 8 hours from start to finish and then you get to clean kettles
Pretty smooth boil today, yes I mashed last night and boiled today. But my starter didn't start. I checked Lallemands web site and it said this East Coast yeast lags more than typical yeast. I have a pack of Safale 04 I'll put 8n a starter and if this East coast doesn't start by tomorrow I'll use the safale

The sherry influence is evident. They let it go for 18 months, and it seems like the decision paid off. Dark fruit, slightly dry, medium mouthfeel and moderate finish. The rye spice is balanced nicely by the sweeter, dark fruit. There's also some herbal notes and a hint of mint. The nose was impressive, especially for a neck pour. It's good.

Nice , I have one of those. Need to mess with it more. You can also use it to smoke stuff like cheese.
