My mom's pressure cooker beef stew over rice. Cooking it today. I finally perfected her taste on my last try. Simple: beef, potatoes, onions, carrots.

Nothing fancy but I always enjoy a good cheeseburger with fries.

Spaghetti with meat sauce with a roll is always good.

Rat's Mom's Pressure Cooker Stew

2-3 lbs stew meat (I like chuck roast)
flour, salt and pepper
water
medium onion
2-3 lbs large red potatoes
3-4 large carrots
cooked rice


Cut stew meat into large cubes (1" to 1 1/2"). Dust with flour, salt and pepper.

Heat a little oil in the pressure cooker to medium heat. Brown the crap out of the beef cubes. Do them in batches so you don't crowd the pot. When you think they're done, brown them some more.

When the cubes are all done, put all of them back into the pot along with a medium diced onion. Add water to cover. Cook meat 35 minutes. (My cooker cooks at 11.5 psi.)

While the meat is cooking peel the red potatoes and cut into large chunks. Peel and cut the carrots into very large pieces.

When the time is up on the meat, lower pressure and add the potatoes and carrots and water, if necessary.

Cook everything for another 15 minutes. Remove all the pieces and add flour to the pot to thicken up the gravy to your liking. Correct seasoning. Combine everything back together and serve over rice.

When you say lower pressure is that the same as quick pressure release or are you slowly opening the release until the pressure is gone.

Edit:

beans and sausage is another one towards the top. IP beans with smoked Boston’s butt and smoked sausage.

My pot is an old fashioned 8 quart PC with a jiggler to regulate pressure. I'm impatient, so I usually cut the fire and pull off the jiggler to drop pressure quickly.

Homemade chicken fried steak with rice and cream gravy. I want that steak patted out to where it damn near covers my entire plate. Big heaping portion of rice and creamy gravy drowning them both. My favorite meal from Piccadilly.

Used to be my mom's veal cutlets and baked Mac and cheese.

Now it's probably my wife's Asian noodle soup.
