Thank everyone for the replies. So far everything is running smoothly. I started late so probably won’t eat a full plate until tomorrow for breakfast. - I ain’t waiting until lunch for leftover jambalaya
I don’t make it often and forgot the parts and made the mistake of going down a YouTube rabbit hole and now I’m confused AF.
FYI I have
- 1lb chicken
- 1lb pork
- 1lb sausage
I also have 320z of HEB chicken stock as well

someone should invent a calculator of some sort for this solution

It would be cool if there were a thread stickied here with the words “jambalaya calculator” in the title

I base my ratios off of the following recipe for a 5 gallon pot:
5 lb rice
5 lb onion
5 lb sausage
15 pounds pork
1 gallon of water (16 cups)
My rice, onion, sausage always equal the same amount.

Personally, I use 1lb meat of choice, 1lb smoked sausage, 1qt onions/bell peppers/garlic combo, 1cup of rice, 2cups stock, season to taste. Then double/triple/quadruple as needed for guests

1 cup meat
1 cup onions/bell pepper
1 cup rice
2 cup liquid
Ratio of liquid to rice goes down with more rice.
