Agree. Two things Birmingham does well is BBQ and craft beer.

I find Rudy's to be average chain BBQ...moist brisket is good , had some ribs there the other day that had no BBQ color could tell right away they where steamed/boiled and put on a grill to add some marks. And their sides are not very good.

My thoughts as well. Very good brisket. Good sausage. Bad ribs. Bland chicken. No comment on sides.

As for BBQ in Red Stick, focus on the meats, keep it simple, and do it well.

Hawkeye when you open the place make sure Chris Robinson is at the grand opening please. My favorite artist of all time. Hi ho is laughable how terrible it is. I'm embarrassed for them

Sauce is admission of failure.

Good bbq over an open pit with a sweet and spicy rub...heaven.

A focus on brisket, pork, and chicken wings is a good way to go.

Bacon, sausage, and hard meats made in house would be a nice find too. Smoked cheese too.

I agree that Rudy's would do awesome in BR. The best BBQ that I have found in South LA is a place called Big Mikes BBQ in Houma. If you are ever in the area the place is legit.

Big Mike's is the best in South La

Did Big Mike's used to be attached to a gas station down there? I stopped at a place after fishing in Dulac that was unbelievable. Went back a few months later and it was gone...

Cheap beer (I suggest Busch Light) on tap for 50 cents a cup and country music playing at all times. All counter girls/waitresses must be busty and friendly. Good selection of homemade pies and banana pudding for dessert. Like others have said the meats are simple but done right. A house specialty sauce that people ask for even though the meat doesn't need it. Fried okra and good cornbread.

One of my fav BBQ joints is Country's in Columbus GA. Don't really remember the meats all that well but the atmosphere/cheap beer/waitresses sure hit home after basic training.
