As others have stated, I could do pizza fairly easily.

Does generic “rice and gravy” count? I could mix and match proteins, veggies, and seasonings to make 20 different kinds of that.

Hell, I'd make it twice with the same ingredients and eat dinner for a week. I'm OMAD already so not an issue.

I make baked tilapia most M-Th...it's easy and healthy and I guess I never get tired of it. Also usually after work I can mindlessly eat whatever.... but once the weekend hits, no way lol

I'd love to see someone eat nothing but lasagna for 7 straight days.

Grilled shrimp or tuna salad.
I could also do rare ribeye, baked sweet potato, or a good ham and cheese sandwich with white bread.

I don't eat 3 meals a day, but I could do a lot with homegrown tomatoes and fresh picked corn on the cob.

I could definitely live off pizza or tacos for a week.
But I think this discussion needs to be clarified a bit. Are we talking about the exact same meal 21 times. Or in the taco case, can I eat breakfast tacos, then maybe beef for lunch, and say fish tacos for dinner?
If it’s just the same exact thing, I am going to go with fried sac au lait. (I loved leftover cold fish for breakfast.)

If this is 7 days of nothing but the same thing, I'm gonna pick something nutritionally complete, like a veggie-heavy quiche. High protein, lots of nutrients and fiber from the veggies

If 7 days of one TYPE of food, I'm going with sandwiches.

Something like this, if I'm limited to one dish. That checks a lot of boxes

At one time I would eat fresh fruit in the morning and a couple cups of coffee, no lunch, and at night I ate baked chicken with skin removed and steamed broccoli with lemon juice and a bit of salt.

I did this for a month and lost 15 lbs. after someone told me about his regimen for weight loss.

It wasn't as bad as it probably sounds to many on here.
