What would you grade these steaks?

I asked if they had prime New York strip and they said yes and grabbed these two steaks off the shelf. I asked to look at them a couple of times because they just don’t look marbled enough to be prime IMO. That being said, I am not a good meat judger and the price was fair (they aren’t bad steaks, but I still don’t think I would call them prime).

What say you guys?

Prime NY Strip or Choice NY strip?

Look choice to me but NY strips don't tend to have as pretty of a marbling as ribeyes imo

Can be called Prime, I’d think...close anyway. Strips aren’t carrying much fat.

They might be prime , but whoever cut them did not do a good job

Were they marked Prime or did the butcher just tell you they're Prime? They look high-end choice, to me.

Probably high choice

I was going to make a thread on this, but just made a 2.4 lbs grass fed tomahawk rib eye.

i think a good strip is far superior to a good rib eye. i feel like 1/3 of the total weight of a rib eye is fat. i have had tons of both, and i think will only eat strips when given the choice from now on

Well......

I have been wanting prime strips for a while now. My go to has told me that they will order a whole side for me but they just don’t sell enough to order it for just a couple of steaks. That being said, I get the same story from all the other places I call...except this place. They say that they do have prime strips, so I go all the way to this place and this is what they call prime strip. Like I said, I looked them over a couple of times and the price was in line with what I would expect to pay for choice.....and the steaks did look nice.... and I was there already.... so I went ahead and got them. I won’t be going there again because I didn’t think they looked prime either. I halfway want to go back and ask to buy choice strips, and then when they show them to me, then ask if they carry prime to see what they say.

Oh well. I’ll be eating nice choice strips tonight. There are worse ways to spend a Saturday evening.

They look choice to me as well. There was a poster on here a couple months ago who is a meat buyer for some large distributor who suggested that even if marked "Prime" you should still look at the marbling yourself because a cow is judged on just one spot of the meat, not the entire animal. Therefore "Prime" for some cuts could contain less marbling than what the grader saw. The same could happen where a cow judged "choice" may produce some cuts that rival prime.

Just curious... but it you cut the excessive 10 inches of extra bone off, is it still a tomahawk?

This was the end result. It was awesome. You can actually see some of the marbling in this shot.
