They’re short ribs, but specifically what they call plate ribs. It’s a square cut of about 4 ribs from the rack, not the little individual cubes commonly found at the grocery.

That pork belly looks amazing. Gonna have to find somewhere that sells that and try it out

How do you like the size of the 480? I have a family of 3 that I'd be cooking for MOST of the time. I'm debating between that and the Rec Tec 590. The only thing I've read negative on the Yoders are rust issues.

The hide has to be as dry as possible for it to puff up like that, otherwise its rubbery and terrible. So what you have to do is get a pan big enough that it can lay flat in and fill the bottom with a good layer of salt. Let it sit hide side down in the salt for 24hrs to draw water from it. Wipe the salt off the hide when ready to throw on the smoker, and put your rub on the meat side only.
Once its cooked, the hide will be hard and crunchy but not necessarily puffed up like pork rinds. So what you do is heat a big pot of grease on a burner next to the smoker, piping hot up to 500 degrees. I put the belly on a rack layed over the pan that I salted it in (after cleaning it out and drying it). Ladle the hot grease over the hide and watch the magic happen.

I too have been looking at them quite a bit.
Spitts and Pitts, Yoder, and Rec Tec mostly. Where are you guys ordering these? I assume nowhere locally has anything like it.

From all the research I'm doing you have to order direct from RecTec & find a dealer to order the Yoders. Not sure about the Spitts and Pitts.

Rectec can only be ordered online...the only place to see one before you buy is their showroom in Atlanta. You can buy a Yoder direct online, but have to pay for shipping or from an authorized Yoder dealer. The closest authorized dealer for the BR/Nola area is a company in Gulfport. I picked mine up there and haggled with them a bit to get the price down a little. P&S dealers are pretty rare...you’re best bet is Houston. When I was trying to decide between a Yoder and P&S, I called a dealer in Cali who sold both. He recommended going with a Yoder, just due to better customer service due to a larger company.

I'm pretty torn. I like what I'm seeing about the Rec Tec 700, plus the 20% off add-ons they have going on is pretty sweet.
Yoder seems like a more solid unit. The integration of fireboard is sweet as well. Any of you guys experience any rust issues?
The P&S seems like a very nice unit as well...

Smoked meatloaf is excellent. You can cook it several ways. Finish it like normal, or you can smoke it and leave it a little undercooked. Then let it cool, slice it in at least 1" slices, and fry it with some cheese on top.

Dino cut short ribs. Seriously one of the tastiest things I've ever smoked. Just incredible rubbed with just salt, pepper, and granulated garlic.

where can you find the slab bacon? Sams in Metairie doesn't carry them. been wanting to try to make these.

I have always had to go to Whole Foods, but I haven't found a good butcher in DFW yet. I am sure the Whole Foods will have it. I would say get about a 3-4lbs slab it should be enough to feed a small group.

Go easy on the smoke. Ruined the first one I did with way too much smoke.
Now I use just a few chips . Do mine on a Weber Kettle usually, Sometimes the 14” Smokey Mountain.
A meatloaf sandwich with melted cheese is hard to beat.
