Blackened out posted a recipe with chicken thighs and preserved lemons (you can buy a jar at World market for $3 if you don't have the time to preserve your own). Its simple and damn tasty:

The aforementioned coconut curry chicken:



The noodles are not pasta, but shiritake noodles (tofu). I guess tofu is not paleo? It's low carb and only 20 calories, 3 carbs for a serving shown in the picture.

would a mashed Cauliflower and Garlic be a descent sub for the tofu?

I think it would be awesome. I have not yet made a cauliflower mash, but it's on my list.

So yall are probably gonna laugh at this, but I tried making a curry without coconut milk. I just put some milk and butter (with some yellow/orange curry) in the cast iron and slow cooked the chicken with rub on them for about an hour. Then I took them out and crisp'd them under the broiler.

I sliced some zucchini and celery into thin strips and sauteed them for a about a minute and a half, and threw them and the chicken back in the cast iron. I made some rice on the side for my wife.

It was probably one of the most savory things I've ever made. I would have taken pics, but me and my pregnant wife ate it all pretty quickly. I still have some more thighs in the freezer, so I'll probably make it again later this week. Will post pics.
