I hand my guests one crawfish at a time once they have properly consumed the previous crawfish. If they even attempt to season the crawfish post boil or dip them in anything, they are immediately rebuked and permanently banned from ever eating another crawfish at my house.

I grew up with B, but since college, it's been A at most boils I go to and my own. I prefer dumping on the table mostly because it's easier - nobody has to wait in line with a tray to get what they want. You can serve everyone at once.

My first batch is perfectly spiced.
Again, by rookies I mean people that will be done after the first batch. People eating less than 5 pounds. The "vets" are still eating off the last batch.

I think it depends on traditions of the locale. Every Baton Rouge boil I've been to dumped them on the table. Every other boil I've been to in other cities had trays.

The only time I've ever seen trays is in pictures from people not in Louisiana. I've never seen it in person.

I've used trays before, but it's only been for big events. Never for a regular backyard boil.

Oh, good grief. I'm from DTB, and everyone uses trays. Every damn WalMart in Louisiana sells giant stacks of plastic trays during spring....who do you think is buying them? There wouldn't be a giant rainbow stack of trays at Walmart if their use was some obscure practice.
I have at least a dozen logo trays from various businesses & promotions, from boat companies to contractors to carnival krewes. I've seen monogrammed trays given as wedding gifts. I think I even have a political campaign tray somewhere in my junk closet.
Some people eat crawfish, as a food, on a regular basis. Not only at a performative event where they must be boiled in a backyard, in a prescribed ritual. It's seafood, not a religious ceremony.

It's light-years easier for eating and especially for cleaning up to just dump it on a table though.
I'm not shitlording here, I was just sharing my honest experience. I've never seen it in person.

That's all we have ever done. We have a couple of those tray types stacked up somewhere collecting dust from the Pelicans game. I was thinking about tossing them soon, thanks for the reminder.

I have crawfish trays and use them when I grab to-go crawfish from somewhere. We also use them to shells or sides on the tables when we boil.
I should clarify that I've never seen people line up for scoops at a boil
