Wiki is the coolest...

You should look for other origins of the food on the webs. Could be cajun or creole. No definitive answer as is the answer for a lot of our foods.

I actually checked about 15 different web sites to back up my claim, and the same thing was said on most of them

I know they do variants of boudin (including blood sausage) and head cheese in the Czech Republic. It's perfectly plausible that boudin and head cheese were not, in fact, spawned by the French.

And I checked 4 or 5 that said it's not definitive. Also, I have like 10 cookbooks that say it's cajun, so it's gotta be.

Nothing. Everything from everywhere was derived from something else, somewhere, even short grain rice which the Chinese had a handle on.Sorry CC.

I didn't google or check cookbooks. I'm just smart.

sure and lots of other countries as well make this claim. but cajuns were french people, so it's not a bad bet to make that those cajuns foods are from the french

First thing I thought of..

But what food anywhere is truly authentic? Not many cultures created their own and didnt borrow ideas from other cultures. People have been cooking on this planet for a good while now.

You could probably pick most any dish and see influence from somewhere else.
