I’m doing two breasts next year instead of one moderately sized bird. Seems like, for the most part, folks eat mostly white meat, with a few exceptions. It won’t stop me from making turkey gumbo either way, but I figure two breasts may be more of a crowd pleaser.

Went to a friend's house and he actually butchered and broke everything down to cook it. Came out great.

As does a dry brined Turkey but you can also cook it a lower temperature in the same amount of time and I'll turn up to 360 (from 295) the last 30 mins to crisp up the skin.

That my spatchcocked turkey cooked way faster than expected. Partly due to an error in pit temp probe placement, causing me to read about 100F lower than actual. Luckily it still came out fine since I was also measuring the internal temp.
Also, that turkey gravy made with drippings from a smoked turkey is one of the best things I've ever made.

Personally, I learned that my Charbroil Big Easy is still the greatest invention ever to produce a delicious, succulent turkey with minimal effort. You don’t get the inside dressing and your gravy may not be as good. But the ease of turkey cooking is worth the compromise.

First one on smoker for me, although I’ve done chickens (beer can, whole, spatchcock).
I put this bad boy in the sink and brined it over night. I used Salt, pepper, sugar, old bay, and cut up apples.
This was final result. I smoked at 225 for a bit, then cranked it up to 350. I did use traeger seasoning and oil. I did put butter, seasoning and honey to baste it.
