What are some good revamp leftover ideas?

I don’t mind leftovers for dinner the next night or so, but I don’t want the exact same thing.
For instance, last week I grilled some burgers for dinner. We still had four pattie’s left, so the next night, I cooked some onions, mushrooms, and peppers, then made a roux for brown gravy. Added the patties, onions, etc, served over mashed potatoes with green beans.
I like chicken salad (not for dinner)from leftover smoked chicken.
Not really a revamp, but I like taco salads after taco Tuesday.

I had leftover shishkabob meat and veggies that I made a quesadilla with some extra cheese I had in the fridge.

With leftover pot roast, quesadillas, omelets, nachos, breakfast burritos with scrambled eggs and roast.
With leftover rotisserie chicken add some Rao’s jarred Alfredo sauce over pasta or with broccoli. Chicken and mushroom flatbread, or pesto pasta, or chicken enchiladas.
Recently, with leftover rotisserie chicken, I used one can of coconut milk, a few tablespoons of red curry paste, two squirts of ginger paste, one squirt of lemongrass paste, some fish sauce, lime juice, and a little chicken stock, I made a quick and tasty soup. Did the same thing a week before with leftover shrimp, but both times, I had all of those ingredients on hand. Oh, it needs a bit of sweet. Coconut sugar or Splenda (for me) or your sweetener of choice.
The key is to have a nice, varied pantry, and then you can pull together something good on the fly.

Tom Colicchio was on a podcast recently and he said he makes waffles out of the leftover stuffing from thanksgiving.

Leftover pot roast on top of a baked potato is a good leftover meal. We also do leftover Mississippi roast open face on top of toast; my favorite like that is leftover roast beef for slicing, leave it cold so it's still rare, dice it small and serve open face on top of toast then the leftover gravy on top
With leftover chicken, I like to make a chicken, mushroom, wild rice soup.
Stir fry and fried rice are good for leftover chicken, beef, or pork.

Various kinds of fried rice with leftover rice.

Tonight is a good example.
We grilled chicken and veggie kabobs yesterday.
Tonight, we are having homemade bbq pizzas for dinner with the leftover chicken and veggies (red onions, peppers, mushrooms, squash, eggplant)
