Pickled shrimp are fantastic. You can use the pickle juice for ceviche as well

Depends on how you use it really. You can pickle eggs, sausages, cucumbers, green beans or beets just for starters.
I also like to make a medley of carrots, celery, onions, garlic, cauliflower and hot peppers and cut the vegetables in like size pieces to pickle.
You can add whatever flavoring you want to the brine if you want a different taste than just plain pickle juice.
