Also did a Jambalaya. Go easy on me. This was probably only the 3rd time I have made this. It was good but the rice may have been a little mushy. Used 6 cups of stock to 3 cups of rice. Cooked covered on medium heat for 25 minutes. Took off of heat and left covered for 3 minutes. How do you keep the rice from getting mushy?









After posting this I thought about I did not account for the liquid already in the pot before I added the stock. That is probably my problem.

This is just my opinion and I'm no pro. I would brown your sausage a little more before you get started to get that dark fond.

I would also cut back on the water just a little bit. Those veggies are gonna sweat out some moisture, adding to the water to rice ratio.

Looks like a tasty jambalaya either way though
