Leftover roast, Creole tomatoes, loaded cauli mash.
The roast is stuffed with Serrano peppers, which is what my mother always used. I've been using jalapenos for a long time (not sure why I changed), but decided to use these. Wow. I didn't realize it would make such a difference in the flavor of the roast, but it brought me back to Mom's roast.
Why did I ever stop using them? Serranos from now on!

Thanks! I miss my mom's cooking, too. This sure took me back in time. When she served the roast to someone new to the table, she'd warn them to remove the peppers. I also forgot that. Serranos are hotter than jalapenos, for sure!

Yeah, they are. I use them often and I get choked up seeding them and don’t put your hands near your eyes after handling them. Made that mistake more than once. Now I wear gloves.
