I smoked a small brisket today. Baked beans and a potato/ onion medley were the sides.

It looks dry as shite, but it really wasn't. It was my first time to use butcher paper for wrapping. The struggle on the electric smoker is getting a good bark on the meat, which is what the waxless butcher paper produces. This one got a little too warm, but it has a great flavor. It cooked to 205.

Probably a bad pic, but it is a work in progress.
