Im not too far in so correct me if needed:

200 for roughly 20 minutes or 120 degrees

Rest for 15 minutes while skillet gets hot on grill

Sear 1 minute per side

somebody here turned me on to the build the nachos on a whole fried tortilla thing then cut after they're cooked and honestly it's changed my life

I am sold. Not as pretty as others but damn good and you cant beat that crust the sear creates.

Out of the oven @ 120 resting for 15min

(ended up taking about 40min at 200)




Fresh off the skillet in the grill, 1 minute on each side.

fry some corn tortillas in oil tip crisp and brown
put em on a sheet pan and put whatever nacho shite you like on them like a tostada...I went with beans, leftover brisket, onion, cheese and jalapeño

under the broiler till bubbly, then the magic happens
cut into fourths with a pizza cutter and you have perfectly piled nachos without the hassle of loading them up one at a time, or even worse, digging them out of a sloppy pile

Emeril's braised chicken thighs. Have done this many a time because of the FDB. Shout out to Louisiana Lady for posting it at some point a good while back. Super easy and so damn delicious.
