Took a rack of spare ribs and trimmed them down to St. Louis style. Smoked those with maple and cherry wood. Also smoked what I trimmed and used it in a pot of purple hull peas. Oven roasted some squash. Girlfriend's grandma had a stroke so I sent the ribs to her parents. I'll have the purple hulls and scrap meat over rice with a side of squash. No complaints.
