She just got home yesterday--goes back in two weeks. She's doing absolutely amazing! They said she is receiving some of the strongest chemo out there, and so far so good. She looks amazing, sounds amazing, etc. I'm just thrilled things are going so well so far.
I actually made the cheeseburger soup for her tonight. She loves cheeseburgers, but hasn't had her normal appetite lately. She's been eating more soups, so I thought this would be perfect for her. We just got back home from visiting with her and eating with her.

ETA: Dinner was two mystery pizzas. I got home and discovered that neither of the two pizzas I ordered were what I received

So glad she's doing well. When my friend's mom was going through chemo, I made her a lot of vegetable soup for the freezer. For whatever reason, she said that's what worked best for her. The potatoes and the beef gave her some strength and she could handle the flavor well.
I have a very simple pureed potato soup in the recipe book that I make a lot when folks have the punies and for some going through chemo. They seem to like the texture and they can gussie it up with cheese, sour cream, bacon, ham, green onions or whatever they feel good about at the time. It freezes well as is, but I also freeze it without the milk, cream or whatever dairy I use and just add that to the servings when it's reheated. I think it does a little better that way.
If she likes beans, the pureed bean soups (or you can skip pureeing them), are pretty good for energy. Also, some soups with fresh ginger might be good since ginger helps settle the tummy, if she ever has that issue.

He spiked a high fever as my wife was picking him up. Pediatrician diagnosed him with strep. He's feeling better after some chocolate ice cream and m&m's

I made a lentil soup a few months ago, but I don't see where I saved the recipe. Here's one from Tom Fitzmorris that I saved. I'm pretty sure I made it and it was good. I don't see any of my usual notes, though.
• 1 lb. lentils
• 3 Tbs. butter
• 1 1/2 cups chopped onion
• 3/4 cup chopped celery
• 3/4 cup finely diced carrots
• 1 clove chopped garlic
• 1 12-oz. can V-8 juice
• 2 quarts light stock (beef, veal, chicken, or a combination)
• 1 tsp. salt
• 1/2 tsp. thyme
• 1/2 tsp. black pepper
• 1 bay leaf
• 1 tsp. Tabasco
1. Sort through the lentils and pick out debris, then wash them. Lentils don't need to be soaked for hours like red beans.
2. Melt the butter in a five-quart saucepan or Dutch oven. Sauté the vegetables until they begin to get tender. Add the V-8 juice, the stock, and the lentils and bring the pot to a boil.
3. Lower to a simmer. Add the salt, thyme, pepper, bay leaf, and Tabasco. Cover and simmer for two to three hours, or at least until the lentils are tender. Stir occasionally.
Serves eight.

I believe the gingered carrot soup I've made is in the thread. It's very fresh tasting.
If your Mom likes yellow squash, there's a lemon thyme squash soup I've made that's also really fresh tasting.
