The mussels here looked horrible so I got double clams and grabbed some tubes and tentacles as well.

Good call. Cut the tubes into circles and leave the tentacles alone. Don't over cook. Squid is weird, it is either cooked quickly or for a long time.

Never done it. Cook it about same time as a scallop? Or slightly more? (Pan cooking)

Rouses pizza which is surprising good. Not earth shattering but I got a 12 inch pizza for 5 dollars. Will re-purchase on occasion.

I'd sear the scallops and remove. Add squid for about three minutes and add scallops back to reheat. Serve immediately.

That's what I went with. I think it is perfect. Thank you

Undercooked everything a tad since it all gets added back to pot/pasta.

It was my eldest nephew's birthday and he wanted the L'Auberge buffet so he could dominate some crab legs. I had a plate of crawfish, which were surprisingly good. I've never had crawfish there before tonight but they were a good size and well seasoned, also very easy to peel. I chased that plate with 2 fried frog legs and 2 pieces of fried fish. The frog legs were very good, albeit I grabbed them just as they put out a fresh batch. The fish was also good. The steamed Brussels sprouts tasted very fresh and I wish I had gotten more of them. Now for the bad... The mac and cheese was terrible. I couldn't even taste cheese. It was impressively bad. The mini chocolate cake I tried for dessert was terrible, and I love chocolate. The key lime mini pie was good not great. In the end it was nice to spend time with the extended family and watch my nephews eat themselves sick on crab legs. The crawfish were the best part of the meal for me. I will say that the service was excellent. If you ever fin yourself at the buffet at LDL in Lake Charles, ask to be seated in Mrs. Ruby's section. Very attentive and friendly. We tipped accordingly
