Rib steak, cooked sous vide, then seared in a cast iron skillet, potato puree, brussel sprouts, green salad, 1991 Mondavi Reserve Cab, 2002 Ridge Home Ranch Cab. Cooking the potatoes from the recipe in Modernist Cuisine at Home. Just got it earlier this week, looking forward to cooking stuff from it this summer.

I'm about to put a brisket in my smoker for tomorrow. Well, it's only the flat of the brisket. I couldn't believe the cost of a whole brisket earlier today at the local Sam's Club.

I don't know what dinner will be yet.

brined and smoked a chicken. will serve with pasta tossed in a sauce pan with some olive oil, garlic and broccoli.
