Damn son. Gotta do better than that. I hit BWW Sunday. It was pretty meh. Service was shite. That Asian zing is dank though.

yo embo, NI, hambone .. thanks y'all. the sauce turned out really interesting. I didn't make my own chili powder like ZappasStache did; can imagine that makes it even 100x better. here's his recipe:
Only things I changed was I added about 2 TBSP of dark brown sugar, a splash or two of cold leftover coffee and melted a TBSP of butter in it at the end to round it out. Used fresh chopped oregano + minced garlic (as instructed) instead of the dried stuff .. always makes a big difference. Props to Zappas for bringing this recipe to the board. It's pretty quick and easy to make and really rich with flavor.

Red Sauce:
2 tablespoons shortening
3/4 teaspoon salt
2 tablespoons flour
1 tablespoon garlic
1/8 - 1/4 cup Red Chile Powder
1/8 cup Oregano
2 cups cold water

carbone.. I just simply made Zappas recipe with those modifications I posted. Cooked 4 small chicken cutlets on the stove in vegetable oils.. Seasoned with salt, cumin, lemon pepper. Scooped some sauce on the bottom of a baking dish, tossed the cubed chicken in some sauce, shredded some cheese inside and wrapped up the tortilla, placed 4 loaded tortillas in baking dish and topped with remaining sauce and shredded extra sharp cheddar. Baked at 400 for 12 minutes uncovered.

Finally eating a small bowl of gumbo. I didn't get home from work until way too late to have it for dinner like I had planned. Oh well, it'll be great for lunch and dinner throughout the week.
